Costa Rica Montes De Oro $15.75 - emilio gamboa, a third generation coffee farmer, produces his coffee in the san pablo de leon cortes region of costa rica's tarrazu valley. our montes de oro primarily consists of lots from four beautiful farms: la trinidad, carrizal, el rosario and teresita. emilio exemplifies our best efforts to encourage all producers to pick only the very ripest cherry. his are depulped, mechanically demucilaged and soaked overnight before drying on raised beds in full sun.
Guatemala Finca El Injerto - Bourbon Varietal $16.50 - arturo aguirre and son arturo jr. cultivate their bourbon in guatemala's famed huehuetenango region near the mexican border. their eye for detail extends throughout their process including cherry flotation, extended fermentation, soaking, drying, and proper storage. each year, the aguirres approach their crop with a consistent commitment to quality; the results are evident in each cup of our most popular coffee.
Honduras Finca El Puente $16.50 - marysabel caballero and husband moises herrera represent the fourth generation of family coffee cultivating tradition. marysabel's great grandfather felipe garcia exported his first coffee beans in 1915. their washing station sits high in the mountains above marcala de honduras in chinacla. our el puente lots are mechanically demucilaged, fermented, washed and soaked overnight before hitting the drying patios, drum dryers and newly installed african drying beds.
Pre-order Panama Esmeralda Especial - Peaberry $45.00 - we’ve been fanatics for the fabled gesha varietal in jaramillo de boquete ever since it hit the market almost a decade ago. we typically prefer the coffees located 'north of the creek’ that stun our senses year in and year out. however, we secretly pine for the peaberry which the peterson’s keep exclusively for us. its gesha sweetness is luscious like the finest wildflower honey of ethiopia and yemen. its body coats like the heaviest bordeaux. its acidity is fine and complex, reminiscent of kiwi and grape. we will roast this coffee on mondays. (except postal holidays!)
Colombia El Jordan $17.25 - our el jordan lot is constructed with coffee from every day of the harvest from the hundreds of members of the apcejor and acedga producer associations in order to offer the best representation of tolima province coffee. both associations are located in the gaitania de planadas portion of tolima. our producers de-pulp their coffee into fermentation tanks using hand cranked de-pulping machines. the coffee beans are washed in the tanks then laid out to dry on parabolic drying beds.
Colombia El Jordan Reserva $24.00 - our el jordan reserva lot invokes the fullest expression of our colombia el jordan. out of hundreds of day lots from a multitude of members from apcejor and acedga in the gaitania de planadas portion of tolima, only three producers were selected: jose ramirez, gustavo charry and javier cruz. our producers de-pulp their coffee into fermentation tanks using hand cranked depulping machines. the coffee beans are washed in the tanks then laid out to dry on parabolic drying beds.
Costa Rica Valle De Los Santos $16.50 - valle de los santos, or valley of the saints, is the historic moniker for costa rica's most famous producing region, tarrazu. this lot represents our first collaborative offering from multiple farmers in costa rica. we carefully crafted this blend of coffees from beneficio don mayo, beneficio los angeles and verde alto to create a coffee whose sum is greater than its parts. each producer mechanically processes their coffee on penagos equipment and sun dries on either raised beds or patios.
El Salvador Kilimanjaro $36.00 - aida batlle and family established a place at the forefront of the coffee producing world with 1st prize at the 2003 cup of excellence. she has remained one of the most innovative and forward thinking producers around. bourbon, introduced to el salvador by aida’s great great grandfather, along with a rare kenyan varietal and a unique approach to ripe cherry selection make kilimanjaro an exceptional coffee. after depulping, it’s fermented overnight, washed, soaked to increase fruit notes and sun dried on a patio.
El Salvador Kilimanjaro – Kenya Process $42.00 - a few seasons back, aida batlle, known for her experimental approach to processing, asked for our help developing new experiments. we arrived with visions of grandeur from years of involvement with processing across the globe, particularly in kenya, ethiopia and burundi. after a few rounds of testing, we asked aida to focus her efforts on the kenya process. double fermentation, double washing, soaking and raised drying beds added a heavy cream flavor, increased the supple mouthfeel and exposed some of the dark fruit we love from kenya.
Guatemala Finca El Injerto - La Cima $28.50 - la cima, cultivated in the capadocia section of finca el injerto, is exclusively prepared for stumptown coffee roasters. only the bourbon varietal planted 25 years ago went into la cima. for this lot, the aguirre family sent their finest pickers to select the ripe coffee cherry at the height of the harvest season. after depulping, la cima was fermented for 72 hours in immaculately clean fermentation tanks before being washed, soaked for 24 hours to increase fruit flavors and sun dried on patios.
Guatemala Santa Clara $15.75 - since 2009, we’ve worked with ricardo ‘el tigre’ zelaya (luis pedro’s cousin) from antigua, guatemala. ricardo cultivates his bourbon and caturra varietals under shade trees which allow a strictly controlled amount of sunshine to reach the coffee plants. he processes his handpicked cherry at his santa clara mill. it is washed in a traditional wet mill with crystal clear water, and then patiently sun dried for days on patios.
Panama Duncan Estate $22.50 - ricardo koyner’s farm is perched on the southern facing slopes of volcancillo in boquete de chiriqui in northern panama. his focused commitment to the farm allows for the high yields and tremendous quality that most organic producers are unable to attain. our duncan estate coffee is mechanically demucilaged, fermented for ten hours and washed at ricardo's kotowa mill. the coffee is then brought back to the farm and dried on raised african beds.

Ethiopia Mordecofe $18.00 - for the last four years, haile gebre has been working with stumptown in what has proven to be our longest standing direct trade relationship in ethiopia. haile achieves a consistently dynamic cup primarily by focusing his efforts on pristine processing and the care of his young plants, which he keeps shaded under an ideal forested canopy. after fermentation, the coffee is washed thoroughly in channels before it is soaked and sun dried on raised beds.
Ethiopia Duromina $17.25 - in 2010, 113 farmers who had constructed their own washing station formed the duromina cooperative. this lot represents only the second time that a clean washed processed version of their coffee exists; we offered their first last year. located just west of jimma, duromina is nestled in the highlands of what is most likely the original habitat of the wild arabica coffee forests. after depulping and demucilaging, the coffee beans are soaked overnight and then laid to dry on raised drying beds.
Ethiopia Nano Challa $18.00 - located west of jimma, nano challa is a newly formed cooperative under the oromia coffee farmer's cooperative union. until nano challa financed mechanical demucilaging equipment two years ago, no one had tasted a clean, washed processed coffee from this area, despite jimma’s reputation as the birthplace of the arabica coffee species. they repaid their financiers fully in one year from the proceeds of last year’s crop. after demucilaging, the beans are soaked overnight and dried on raised beds.
Kenya Gaturiri $25.50 - our gaturiri lot demonstrates a commitment to quality cherry selection, processing and lot separation at the washing station. each farmer has an average of 300 coffee trees grown naturally under the shade of grevillea, macadamia, and eucalyptus trees. a few years ago, we initiated an incentive program to pay pickers more for picking a1 cherry, which designates the best selection. a1 cherries are depulped then the beans are fermented and washed twice before being soaked and dried in two stages.
