I went with Salero because the cooking is more ambitious, the Spanish menu (“Midwest inspired by Spain” is how Aubin puts it) is more of the moment, and I love the space.

Everything was delicious but don't miss the croquetas de jamon from the tapas bar menu. Maybe the best croquetas I have ever had in Chicago. The only negative thing: wines way too expensive

This Spanish restaurant rings in its first summer with a wood-trimmed sidewalk cafe, a rustic counterpart to the white-on-white cafe at adjacent Blackbird.

The chorizo stuffed quail is phenomenal. Chorizo is made in house and the tossed spinach with pine nuts and golden raisins is a lovely side dish. The churros are a great dessert.

The churros at Salero are a must. Piped and fried to order, the ephemeral ribbons are 99.2 percent air, held together by a miracle of physics with the crispiest gossamer exterior.

The grilled octopus was great. Overall everything was fresh and had nice flavors. Don't get the cheese dessert plate if you ordered the beet salad for appetizers, they are basically the same thing.

Don't come here if you're in a rush. Service is incredibly slow. We waited over 30 minutes between appetizers and entrees. Otherwise, try the quail and the sweetbread. We're still waiting on venison.

Venison was amazing. Veal sweetbreads too. And seriously - I've been to Spain a few times and I've never had churros this good. And the flan...to die for.

Grilled Octopus was phenom! Leave room for churros with a salty chocolatey-espresso-y dip.
