  • ChefMozThe sushi at Sushi Koyo is great. From my conversations with the sushi chef, Hiro-san, I have learned that he has studied many of the fish from his days in Japan. He really knows his fish. You must look at the "Trust Me" board behind him to see what things are recommended. Some things are seasonal, and if you don't know what something is, ask him. He will let you know if you will like it or not. I suggest going to Sushi Koyo knowing what you want and ordering it all at the beginning. Once the crowd starts coming in, you don't want to be left behind. If you don't know what you want, you can ask for omakase, which means the chef will decide for you. (Usually it's the seasonal stuff and the best things of the day.)

  • ChefMozSushi Koyo completely changed my sushi experience. Trust me - I've been to a lot of different places, but this place is BY FAR the best. In fact, there's no comparison. My favorites: Butterfish, Blue Crab Hand Roll, Hamachi, and pretty much everything he serves. I could eat one entire meal of the same item. It is THAT good.Oh, and trust Hiro, he will not do you wrong.

  • ChefMozI was speechless and felt so excited when I tried the first piece of sushi at Shushi Koyo (esp. Sea Urchin)! Have you ever had a piece of sushi which basically MELTS in your mouth?!? If not, you gotta try this! I've been to the fishermen's market at Tokyo, which I thought should be the best sushi place, but I should take it back after I tried Mr. Hiro - the funniest and most talented chef I've ever met! Personally, I haven't been a big fan of sushi before, but now I learnt what is authentic excellent sushi here. Thank you Hiro! We had a great time on Friday! Trust Me! You are the BEST! I'll keep referring my friends to you for sure going forward!

  • ChefMozFirst, I'm a frequent customer (almost twice a week), so I've talked to Hiro (the owner) a lot and I know a lot about his operations.He's been in business for 20 years, same location and many familiar customers. By the way, he also recently earned 100% from the Health Department Restaurant ratings. (Longevity, popularity, and cleanliness speak volumes in my guidebook.) Hiro knows his fish. He was once a commercial fisherman and once operated a wholesale fish market. And, to this day, he's still an avid fisherman.He shops for fish about three times a week. His shopping days start early: about 5am. He visits 4-5 places, looking for the freshest fish for the best value. As his customers and shopping are constant, his fish tends to be very fresh. By the way, stick to his "Trust Me" board for the best choices.Lunch is a full-service Japanese restaurant. Dinner features only the sushi bar (no kitchen food). (Don't ask for a rainbow, crunchy, or spider roll. He only makes traditional rolls.)Mention Pierre's review in ChefMoz!

  • VelvetThis is a Traditional Sushi house. Bar is Omakase only. And Dinner is sushi only. If you want to choose your own sushi you must sit at the table. But I suggest you trust Hiro-san. He knows what's good
